When you use PhotoShop to edit photos like this, the text is always in a separate layer.
I recommend that you look at these Photoshop CS4 training tutorials where you will find loads of helpful hints and tips to learn how to change the font colours.

I like your idea. I think I have more photos of my cat sleeping than I do of his cute and funny antics.
One immediate notice was the fonts. Is there any way you can change the color to make it more visible; maybe red? I'm just beginning PS so I'm mostly full of questions rather than solutions. Keep up the good work.
